Yummy Steak Sandwiches

Here’s a recipe I’ve adapted from one I saw in Rachael Ray’s Magazine.  It really is delicious.

Ingredients:

1 medium onion

3 Tbsp. Extra Virgin Olive Oil

1 lb. of flank or sirloin steak

4 sub buns

8 slices of cheese (I used Swiss, but you can use whatever you like)

Salt & Pepper, to taste

Directions: Slice both your steak and onion into thin slices.  In a large skillet, heat 1/2 of the Olive Oil over medium heat.  Add onions, some salt, and pepper; and cook until they are translucent.  Remove onions from skillet.  In the same skillet, heat the other 1/2 of the Olive Oil over medium-high heat.  Add the steak, season with salt and pepper; and cook 2-4 minutes until the pink just barely disappears.  Meanwhile, slice and toast your sub buns.  (I threw mine under the broiler for a few minutes).  Once the meat is done, you can just build your sandwich.  You can add lettuce, tomato, etc. to your liking.

This recipe would be really delicious if you added mushrooms to the onions.  It would also be an easy thing to make ahead and heat up quickly on those crazy week nights!  Enjoy!
